Grilled
Abalone With Fruit
Ingredients
1/2 cup sherry
1/2 cup soy sauce
2 Tbs. balsamic vinegar
1/2 cup mango juice
1/2 tsp. dry mustard
1 Tbs finely minced garlic
1 Tbs. grated fresh ginger
16 (1-oz) abalone steaks
2 1/2 Tbs. brown sugar
1 1/2 tsp. cornstarch
8 oz cubed pineapple
8 oz cubed pears
8 oz cubed peaches
Wooden skewers
Soak the skewers in water
for about 30 minutes.
Mix the first 7 ingredients
in a bowl. Set aside about 1/3 if it for use later as a glaze.
Put the abalone in a
shallow dish and pour the marinade over it. Marinade the abalone
for between 30 minutes and 4 hours.
When you are ready to
eat, fire up your grill to a high heat. (You must cook it quickly
or it gets tough.)
Put the marinade that
you set aside in a saucepan over low heat. Whisk in the cornstarch
and brown sugar. Set this aside but keep it warm.
Instead of just sticking
the abalone on skewers, you'll need to lay them out flat and use
two skewers, one on each side. (It needs to be flat so it can cook
quickly.)
Now add some fruit and
alternate between the fruit and the abalone until the skewers are
loaded up.
Grill the skewers for
about 1 minute per side. (Don't overcook them.) Brush with glaze
and serve. |
Abalone with Butter
& Garlic
12 abalone, prepared
4 ounces butter (live a little)
2 teaspoons crushed garlic
1 lemon
salt and pepper to taste
Microwave the butter until it is partially melted.
Add the crushed garlic and microwave for another minute on medium
power. Pour this into a dish big enough to hold the abalone but
small enough to fit in the microwave. Add the abalone meat and cook
for a minute or two then flip the meat and repeat. Don't over cook
it or it will be tough. Serve with lemon.

Abalone Stew
1 pound raw abalone, tenderized and cut into
small cubes
1/3 cup unsalted butter
1 med onion,
chopped
1 clove of garlic,
minced
1/3 cup chopped bell
pepper
1 bay leaf
8 ounces tomato sauce
2 cups water
3 potatoes, cubed
½ teaspoon salt
1/3 teaspoon cayenne pepper
Melt the butter and saute the garlic, bell pepper
and onion. When the onion is clear, add the remaining ingredients
(except the abalone) and simmer for 15 minutes. After 15 minutes,
add the abalone and cook another 5 minutes or so.
