I'm a big believer in growing or catching your own food whenever possible. This way you know how fresh it is, where it came from, how it was handled, and so on. So go get yourself a fishing pole and some bait and get busy!

Bass Recipes

Broiled Bass

4 8 oz. bass fillets
1 large onion (sliced and separted into rings)
¼ cup melted margarine
Worcestershire sauce
1 Tbsp lemon pepper
1 lemon
½ teaspoon cayenne red pepper

Preaheat the oven to 450°. Coat the bass with the melted margarine and put it on your broiler pan. Sprinkle the fish with the lemon pepper and cayenne pepper. Arrange the onion rings on top of the fish then give each fillet a few shakes of Worstershire sauce. Bake the bass for 8 minutes then fire up the broiler and brown the fish and the onions. Squeeze the lemon over the fish and serve.

Baked Teriyaki Bass

2 lbs. bass fillets
6 oz. teriyaki sauce
lemon juice
lemon pepper
1 medium onion, thinly sliced

Soak the bass overnight in the teriyaki sauce. Line a small baking pan with tinfoil and place the fish inside. Sprinkle the lemon juice and the lemon pepper on the bass then arrange the onion slices on top of everything. Cover with foil and bake at 375° for about 20 minutes or until the fish is flakey.
