Chicken Pasta Salad w/ Blueberries
1 cup Fat Free Red Wine Vinegar Dressing
3 cups spiral pasta
2 cups (about 1 pound) cooked chicken, cubed
1 cup sliced celery
1 cup fresh blueberries
1 cup pea pods,
trimmed, cut-in-half
1/2 cup finely chopped red pepper
1/4 cup chopped parsley
1/4 cup chopped red onion
1/4 cup red wine vinegar
2-3 tablespoons chopped fresh basil
salt and pepper to taste
1/2 cup freshly grated Parmesan cheese Cook
the pasta as usual but when it has about a minute left, add the
pea pods. Drain and rinse the pasta & pods with cold water.
Now toss everything except the cheese together
and refrigerate several hours. This will help the flavors blend.
Top with Parmesan cheese and serve cold. |
Blueberry Stuffed Cornish Game
Hens
8 Cornish game hens, thawed (or as many as you
need)
salt and pepper to taste
¼ cup oil
¼ cup lemon juice
4 cups fresh blueberries
4 teaspoons sugar
1/2 cup butter or margarine
8 small bay leaves
Preheat the oven to 350°F. Sprinkle the
birds with salt and pepper inside and out. Mix the oil and lemon
juice and brush it all over (and inside) the game hens. Now fill
each bird with ½ cup blueberries and ½ teaspoon of
sugar. Sew or skewer them shut and place them in a baking pan. Brush
some butter on the game hens and then place a bay leaf on top of
each one. Bake for about an hour or until a leg is easily removed.
(Obviously this makes a lot, feel free to adjust
it to your needs. Game hens have a lot of calories too so think
portion control on this
one.) |
