Broccoli With Shallots

4 cups fresh broccoli florets
1/2 tsp minced garlic
1 Tbsp minced shallots
1/2 tsp red pepper flakes
cooking spray

Bring a pot of water to a rolling boil then blanch the broccoli for 2 to 3 minutes, just long enough to make it tender but still crispy. Drain.

Give a frying pan a shot of cooking spray and put it on medium heat. When it is hot, add the garlic and shallots. Cook it for 15 seconds then add the broccoli and red pepper flakes. Stir it well and heat thoroughly. Add salt and pepper to taste and serve.

Very Veggie Salad

4 cups raw spinach (cut it up a little if desired)
4 cups chopped romaine lettuce
2 cups any color chopped bell pepper
2 cups cherry or grape tomatoes
1 cup chopped broccoli
1 cup chopped cauliflower
1 cup sliced yellow squash
1 cup sliced zucchini
2 cups sliced cucumber
2 cups chopped baby carrots

Don't be afraid to add or change the ingredients of this salad, it is all about what you like anyway. To prepare, just wash everything, cut it up a bit as needed, mix it up, and serve it with a low fat / low calorie dressing. (Danger: The dressing is where a lot of people mess this up so be sure to read the labels when you buy it.)
