Loaded With Vitamin C

You'd probably never guess it but cabbage is loaded with vitamin C. Interestingly, if you cut it up more than an hour before you plan to use it, cabbage loses some of its nutrient value so wait as long as possible before preparing it.

Cabbage Recipes

Hawaaian Coleslaw

4 cups fresh, finely shredded green cabbage
2 oranges, peeled, sectioned, & cut into chunks
1 cup crushed pineapple, drained
1/2 tsp. salt
1/4 tsp. ground ginger
1/4 tsp. ground nutmeg (use freshly grated if you have it)
1 tbsp. orange juice
1/4 tsp. white pepper
1/2 cup lite Miracle Whip

In a large bowl, combine everything, tossing it together as you go. Save the Miracle Whip for last and gently fold it in. Serve cold.

Garlic Chicken with Cabbage
Crock Pot Recipe

1 whole chicken, cut up
Your favorite poultry rub
1 medium onion chopped (big chunks are better)
4 garlic cloves (add more if you want)
salt and pepper to taste
1 head cabbage
2 Tbsp butter or margarine
Garlic salt

Season the chicken with your favorite poultry rub (we use Paul Prudhomme's Poultry Magic) and put it in your crock pot. Add everything but the cabbage and butter. Add enough water to cover the chicken and cook on HIGH for 4 to 5 hours or until the chicken is mostly done.

Now you'll want to core the cabbage and cut it into good sized chunks. Put it in a large pot, add the butter and then salt and pepper to taste. Cook on medium to high heat for about half an hour or until tender. Drain and use as a bed for the chicken.
