Cantaloupe
Cooler
1 cantaloupe (chilled)
1/2 cup ice water
1/4 cup mint leaves packed
8 ice cubes
2 tablespoons lime juice
Cut the cantaloupe into
quarters. Cut the fleshy part away from the skin. Put everything
into a blender and blend it until smooth. Serve immdiately. |
Morning
Fruit Salad
1/2 medium cantaloupe
2 kiwi fruit
1 pint strawberries
1/2 pint raspberries
or blackberries
3 tablespoons chopped fresh mint
1/4 cup freshly squeezed orange juice
Use a melonballer to
scoop out the cantaloupe. Put the melon balls in a bowl. Peel the
kiwi then cut it into slices then cut the slices in half. Add the
kiwi to the melon balls. Cut the strawberries up and add them to
the kiwi and melon. Add the raspberries (and/or blackberries). Drizzle
the orange juice over the fruit then top everything with the fresh
mint. Refrigerate for 30 to 45 minutes and serve chilled. |
