Power Carrot Smoothie
2 cups of carrots, chopped
1½ cups pineapple juice
3 Tbsp. honey
3-4 ice cubes
½ cup vanilla nonfat yogurt
Start by putting the carrots in a blender on
high. SLOWLY add each addtional ingredient waiting until the smoothie
is consistent before adding more.

Honey Carrots
2 lb baby carrots
1 medium onion, cut up
1 ½ cups of chicken stock
2 Tbsp chopped parsley
1 ½ Tbsp honey
1 Tbsp butter
½ tsp thyme
Melt the butter over medium heat. Cook the chopped onion until
it is clear. Add the remainder of the ingredients (except the parsley)
and simmer until done, about 20 minutes. Serve topped with parsley.
