Celery
and Apple Steam-Fry with Honey-Mustard Sauce
Makes 4 servings
Ingredients:
1 cup water
4 cups celery, diagonally sliced about ½" thick
2 cups diced red apples (approx. 2 medium)
2 tbsp Dijon-style
mustard
1 tbsp honey
1 tsp cornstarch
1/8 tsp ground black pepper
¼ cup walnuts, chopped & toasted (optional)
In a large skillet bring
the water to a boil. Add the celery and the diced apples and cook
until they just turn tender, about 8 minutes. In a separate small
bowl combine the mustard, honey, cornstarch and black pepper along
with 2 Tbsp. water. Add this mixture to the apples & celery.
Cook and stir constantly until clear and thickened, about 1 minute.
Stir in walnuts, if desired. |
Roast
Celery with Apples
Makes 4 servings
Ingredients:
1 large crushed clove
of garlic
2 tbsp extra virgin olive oil
1 stalk of celery, about 1 ½ lbs
2 peeled & quartered Golden Delicious apples
1 cup apple juice
¼ tsp ground cinnamon
¼ tsp salt
1/8 tsp ground black pepper
4 slices toasted Italian bread
Preheat the oven to 375°F.
Place the garlic and the oil in a 13 x 9 x 2-inch baking pan and
bake until oil is hot, about 5 minutes (don't overdo it). Meanwhile
cut off the base of celery then cut off the leaves. Cut the stalks
in half (optional). Place celery, apples, apple juice, cinnamon,
salt and pepper into a baking pan and bake uncovered for about about
40 minutes, just until the celery is crispy/tender, basting with
pan juices every 10 to 15 minutes. Serve hot over Italian bread.
