Cod has a dense white flesh which is low in fat and has a delicious, mild flavor. They are also called haddock, in case if you were wondering.

Cod Recipes

Baked Cod Fillets

1/2 cup melted margarine
1/3 cup mushrooms, sliced
1 tsp. salt
1 tsp. marjoram
1/4 cup seasoned dry bread crumbs
1/2 cup melted margarine
2 lbs. cod fillets
1/2 tsp. pepper
2 tsp. lemon juice
You'll also need some wax paper


Preheat the oven to 400°. Grease a baking pan with margarine then spread the mushrooms over the bottom of it. Lay the fish out over the top of the mushrooms. Season the cod with the salt, pepper, and marjoram. Top with the breadcrumbs then drizzle the melted margarine over the whole works. Crumple a piece of wax paper and place it directly on the fish and pop it in the oven. After 7 minutes or so, remove the wax paper and bake the cod for another 5 minutes. It is done when it is flakey.

Savory Baked Cod

1 1/2 lb. cod
Salt
1/2 tsp. dry mustard
2 tsp. water
1/2 cup light mayonnaise
1 tsp. minced onion
1 tsp. fresh lemon juice
1/2 tsp. thyme
1/16 tsp. black pepper
Paprika (optional)

Preheat the oven to 350°. Rinse the cod and pat it dry. Arrange in greased (use margarine or spray on olive oil) baking dish. Sprinkle with salt. Dissolve the mustard in water. Add it to the mayonnaise along with next 4 ingredients. Spread this mixture on the cod. Bake for about 25 minutes or until flakey. Garnish with sprinkling of paprika and serve.
