Cucumber and Tomato
Topping
2 medium cucumbers, peeled, seeded & cubed
1 Tbsp white wine vinegar
1 Tbsp fresh parsley, chopped
2 Tbsp fresh chopped basil
1 ripe medium tomato, cubed
1 clove minced garlic
2 Tbsp Olive oil
8 oz pasta, cooked and drained
In a large bowl, combine everything but the
pasta and toss it together. Cook the pasta according to the directions
on the box. Serve the cucumber mixture over the pasta or toss it
in.

Watermelon Cucumber
Salad
1/4 cup distilled white vinegar
1/4 cup sugar
1/4 tsp crushed red pepper
4 cucumbers, peeled, halved and seeded
salt
8 cups watermelon, seeded and cubed
1/4 red onion sliced thinly
In a saucepan, combine the vinegar, sugar and
pepper. Bring to a boil for one minute and then let cool. Slice
the cucumbers and sprinkle them with salt (to taste). Now gently
toss everything together and serve cold.
