Winter Squash Weight Loss Benefits

Squash Recipes

Sautèed Summer Squash

Makes 4 servings.

2 cups diced summer squash
olive oil cooking spray, as needed
1 cup coarsely chopped onions
1/2 cup chopped parsley
Salt & pepper to taste
Butter, to taste (optional - live a little)

Wash and cut the squash into slices. Spray your saucepan with a touch of olive oil spray. Add the onions and sautè just until golden brown. Add the squash and cook until tender, about 10 minutes, stirring enough to keep the squash from sticking. Sprinkle with chopped parsley and serve with butter & salt and pepper. This is so good you'll wonder why you've never eaten squash before.

Grilled Summer Squash

Makes 4 servings.

2 medium sized summer squash
Low cal vegetable spray
Dill pepper and/or lemon pepper

Slice the squash lengthwise into long strips. Spray each side of the squash strips with the vegetable spray. Place the slices directly onto a warmed grill. When the squash is tender but firm it is done. Remove it and serve with dill pepper and/or lemon pepper. A little butter on your squash is nice too but don't get carried away. This is absolutely delicous.
