Flounder

No, not that flounder!

If you hear the word "flounder" and think of Kent Dorfman instead of the tasty fish, you are really missing out. Flounder (the fish) is not only delicious but it is very low in fat which makes it an excellent choice for people who are trying to lose weight.

Flounder Recipes

Baked Stuffed Vegetable Flounder

Flounder filets, enough to feed everyone.

Then, for each fillet you'll need:

1/2 c. sliced zucchini
1/2 c. sliced mushrooms
1 thin slice tomato
Pinch of dried basil

Preheat the oven to 375°. Put the vegetables for each filet on top it and then roll the filet up. Use toothpicks to hold it all together. Bake for 12 to 15 minutes or until flakey.

Greek Flounder

1/4 cup lemon juice
1 1/2 tablespoons balsamic vinegar
1 teaspoon dried oregano
1 1/2 teaspoons olive oil
1/4 teaspoon salt
1/8 teaspoon pepper
4 - 4 oz. flounder fillets
olive oil cooking spray
3 tablespoons chopped fresh parsley

Preheat the oven to 350°. Combine the first six ingredients and set aside for a minute. Coat a 13 x 9 glass baking dish with a shot of spray on olive oil. Place the fish in the dish and then pour the lemon mixture over it. Bake the flounder for 13 to 15 minutes or until flakey. Sprinkle with parsley and serve.
