Green Beans

One of the most popular vegetables.

Green beans are a good source of folic acid, vitamins A & C, and they even have a bit of iron. Choose beans that snap easily and are free from blemishes.

Green Bean Recipes

Lemon Walnut Green Beans

8 cups green beans
cooking spray
2 cups sliced green onions
1/3 cup chopped walnuts
3/4 Tbsp crushed dried rosemary
5 Tbsps fresh lemon juice
1½ Tbsps grated lemon rind (optional)

Put the green beans in a steaming basket over boiling water. Cover and steam until crispy but tender, about 8 to 12 minutes. Immediately put the beans into cold water to stop the cooking process. Drain and set aside.

Spray a deep frying pan with cooking spray. Sautè the green onions until tender. Add the green beans, the walnuts, the rosemary, and the lemon juice. Sautè this mixture until it is heated through. Sprinkle with limon rind and serve.

Green Beans & Okra

1 lb okra, uncut
1 Tbsp olive oil
1 medium onion, diced
1 lb fresh green beans
2 large garlic cloves, crushed and chopped
1 cup water
salt & pepper to taste
1 6 oz can tomato paste

Wash the okra pods, trim the stems, but leave the caps. Rinse them well and drain. Set aside. Wash the beans and cut them in half.

In a saucepan, combine the water, tomato paste, olive oil, onion, garlic, and salt & pepper. Bring to a boil, stirring constantly. Add the beans & okra (if you need more water to cover everything, go ahead and add some). Cook until the beans & okra are tender.
