A Sweet Side Dish

Leeks have a pleasant sweet/onion taste which makes them ideal as a side dish. At only 25 calories for half a cup you can be sure that they will help you burn the fat.

Italian Leek Patties

4 leeks, cleaned and cut up
1 onion
3 tablespoons oil
4 slice white bread, cubed
1/4 cup milk
2 tablespoons flour
1 egg
salt and pepper to taste
oil for frying

Boil the cleaned leeks until they are soft. Drain well and grind them up in a food processor. Set aside. Soak the bread in the milk and also set aside. Now saute the onions in the oil and add the processed leeks. Squeeze the bread dry and add that along with the flour, salt & pepper, and egg. Shape the mixture into balls and fry in hot oil. Don't be afraid to adjust the flour if needed.

Leek Soup

¼c plus 3 Tbsp butter
4 sliced leeks (washed)
1 quart chicken broth
3 turnips, cubed
3 Tbsp flour
2 cups milk
2 shredded carrots
Salt and pepper to taste

Melt ¼ cup of butter in a large pot and saute the leeks. When they are softened, add the chicken broth. Bring it to a boil and add the turnips; simmer until everything is tender.

In a separate small saucepan, melt the rest of the margarine and slowly add the flour, stirring as you go. Next, slowly add the milk and then bring it to a gentle boil. As soon as it thickens, add it to the leek mixture to thicken it. Serve with carrots sprinkled on top.
