Leek Soup
¼c plus 3 Tbsp butter
4 sliced leeks (washed)
1 quart chicken broth
3 turnips, cubed
3 Tbsp flour
2 cups milk
2 shredded carrots
Salt and pepper to taste
Melt ¼ cup of butter in a large pot and saute the leeks.
When they are softened, add the chicken broth. Bring it to a boil
and add the turnips; simmer until everything is tender.
In a separate small saucepan, melt the rest of the margarine and
slowly add the flour, stirring as you go. Next, slowly add the milk
and then bring it to a gentle boil. As soon as it thickens, add
it to the leek mixture to thicken it. Serve with carrots sprinkled
on top.
