Lobster

Lobster

Not always the king.

Back in the olden days, lobster was actually considered to be a lowly food. It was used for fertilizer and to feed slaves and it wasn't until modern transportation methods were invented that it was considered a delicacy.

Cooking Your Lobster

Boiled Lobster

You'll need...

Lobster(s)

A very large pot. It should be big enough to hold enough water to completely cover your lobsters and to allow for a good rolling boil.

Salt - 1 Tbsp per quart of water.

Bring the water to a rolling boil. Put the pre-killed lobsters in and bring the water back to a boil. When it starts to boil again, start timing.

For 1 pound: 5 minutes
1 1/8 pounds: 6 minutes
1 1/4 pounds: 8 minutes
1 1/2 to 2 pounds: 8 to 10 minutes
more than 2 pounds : 12 minutes

Be careful not to overcook your lobster.

When it is done, simply take it out, crack it open, and enjoy. Note that while lobster is on the list of fat burning foods, butter is not. I actually prefer it plain but if you don't I would suggest that you use melted margarine instead of butter.

How to Kill a Lobster

Just because we are going to eat something doesn't mean we have to let it suffer. If you are going to boil your lobster, please, please, please kill it before you put it in the pot. The evidence suggests that they can feel pain and obviously being boiled to death is not a good way to go.

There are detailed instructions about how to pre-kill your lobster here.
