Broiled Pork Chops with Nectarines
4 loin pork chops, trimmed
¼ tsp coriander seeds
¼ tsp ground cumin
½ tsp black pepper
¼ cup cider vinegar
1 tsp rum (optional but go head and live a little)
4 halved nectarines, pitted and peeled
In a shallow baking dish or large ziploc bag,
combine everything but the nectarines. Let the meat marinade for
at least 8 hours (overnight is better). When you are ready to eat,
place the meat and the nectarines on your broiling pan and broil
the pork chops for 3 to 4 minutes per side. Serve hot.

Chilled Nectarine Soup
8 small nectarines, cut up
1 cup apple juice
1 cup cranberry juice
½ tsp salt
½ tsp red pepper flakes
1 Tbsp balsamic vinegar
¼ cup fresh cilantro leaves
In a blender, combine everything but the cilantro
leaves. Beat it until smooth then add the cilantro leaves and beat
again for just a second or two.
