Baked Onions
4 medium sweet onions
¾ cup water
¼ cup balsamic vinegar
2 tsp cornstarch
2 tbsp water
Preheat oven to 350° F. Peel the onions
and put side by side in a small baking dish. Mix the water and the
vinegar and pour over the onions. Bake for two hours and then thicken
the juice with a mixture of the cornstarch & 2 Tbsp of water.

Sweet Onion-Pineapple Salsa
½ cup chopped sweet onion
2 cups fresh pineapple
½ cup diced red bell pepper
1 tbsp chopped cilantro
1 tbsp chopped jalapeno
1 tbsp fresh lime juice
Combine all ingredients, mixing well. |
