Oyster Recipes

Baked Oysters with Garlic

12 fresh oysters, shucked and rinsed
3 Tbsp margarine
1 tsp. margarine for greasing baking dish
1 clove garlic, minced
1/2 cup dry unseasoned breadcrumbs
2 teaspoons chopped fresh parsley
salt and pepper to taste

Preheat oven to 400°. Use 1 tsp or so of margarine to grease a baking pan. Set aside.

Melt the margarine in a small frying pan. Add the garlic and breadcrumbs and saute this over medium heat until the mixture is brown and crumbly. Turn off the heat and add the parsley. Top the oysters with the crumb mixture and until done, about 15 minutes.

Baked Oysters

1 can whole oysters (or 16 fresh oysters, cleaned and shucked)
1 c. flour
1 egg slightly beaten
Seasoned, dried bread crumbs
Olive oil

Preheat the oven to 400°. Combine the flour, salt, and pepper. Roll the oysters in the flour mixture, dunk it into the egg, then roll it through the bread crumbs. Put the oysters in a baking pan and drizzle them with the olive oil Bake for 15 minutes or until done.
