Scallops in Spicy Papaya Sauce
1 small peeled papaya, seeded & chopped
1 chopped red or green
bell pepper
½ red onion,
chopped
2 tbsps lime
juice
1 tbsp chopped fresh cilantro
1 tsp minced jalapeno peppers
1 tbsp olive (or vegetable) oil
2 tbsp all-purpose flour
1 pound sea scallops
salt and pepper to taste
Combine the papaya, red pepper, jalapeno peppers, lime juice, and
cilantro and set it aside. In a large Ziploc bag, combine the flour
& salt along with the pepper and scallops; shake to coat.
In a heavy skillet, heat the oil and cook the scallops until golden
brown. Put the scallops over the papaya sauce and serve.
