Fall Festival Fruit Salad
Main Ingredients
4 cups of spinach
leaves, chopped
1 red apple, cored and thinly
sliced
¼ lb grapes
1 melon (any type) seeded
and cut into chunks
½ cup pomegranate seeds
Citrus Dressing
½ cup plain yogurt
¼ cup unsweetened orange juice concentrate, thawed
(Combine these two ingredients to make the dressing.)
Cut the spinach into bite-size chunks and put
a handful in a bowl. Top with the apples, grapes, and melon wedges.
Sprinkle the pomegranate seeds over the top then drizzle the citrus
dressing over it.
