Quince

Don't eat them raw.

Quince are one of the few fruits that can't really be eaten raw. Their juice has an unpleasant astringet quality BUT if you cook them, they take on a delicious flaver that is something between an apple and a pear.

Quince Recipes

Quince Slices with Honey and Lime

4 medium quinces, roughly 2 lbs
4 Tbsp honey
3 Tbsp lime juice
3 Tbsp water

Preheat the oven to 300° F. While it is heating up, quarter and peel the quinces. Remove the entire core and any hard bits around it. Cut them into four slices and arrange them in a baking dish so they overlap slightly. Drizzle the honey, lime juice, and water over them, cover with foil, and bake for one hour or until the fruit is soft. At that point, take the foil off, turn the heat up to 425°F and let the syrup thicken and the fruit brown slightly.
