Raspberry Chicken for the George Forman Grill
4 boneless chicken breasts (or however many you need)
6 Tbsp crushed rasberries
2 Tbsp red wine vinegar
1 tsp minced horseradish
1 tsp minced garlic
1 Tbsp cornstarch
(If you've been thinking about getting a George
Foreman grill ,
now you have an excuse to buy one.. They are great so don't worry
about that.)
Grill the chicken until done, about 3½
minutes. Mix everything else in a pan, bring to a boil, then simmer
for a few minutes. Pour this over the chicken and serve.

Raspberry Salsa
2 cups raspberries (frozen or fresh)
½ tsp ground cumin
½ bunch cilantro, chopped
¼ cup chopped scallions
1 medium jalapèno pepper, finely chopped
3 Tbsp virgin olive oil
salt & pepper to taste
Combine everything being sure to break up the
berries a bit. Serve with pork, chicken or fish.
