Regular lettuce is pretty much lacking in nutrients but Romaine lettuce is packed with vitamins K, A, C PLUS manganese, folate, chromium, and on and on and on. It's good stuff, people.

Romaine Lettuce Recipes

Orange Romaine Salad

1 head Romaine lettuce, washed
2 oranges, peeled & sectioned
A few rings of onion

DRESSING:

1/4 c. olive oil
2 tbsp. orange juice
2 tsp. vinegar
Pinch of dry mustard
1/4 tsp. salt

Shred the romaine so it is bite sized. Put it in a big bowl as you go. Add the orange sections and onion. Separately, whisk the dressing ingredients together and pour it over the salad. Toss well, chill in the fridge for a bit, then serve.

Romaine and Strawberry Salad

1 head romaine lettuce
2 bunches watercress, stems removed
1 pt. sliced strawberries
4 thinly sliced rings of onion

DRESSING:

1/3 c. extra virgin olive oil
1 tbsp. raspberry vinegar
1 tbsp. lemon juice
1/2 tsp. sugar
1/2 tsp. salt
1/8 tsp. freshly ground black pepper

In a good sized salad bowl, combine the romaine, the watercress, the strawberries, and the onion. In a separate bowl, whisk the dressing ingredients together then pour it over the salad. Chill for a bit then serve.
