Chilean Sea Bass are highly prized for their delicious, flakey meat. It is sometimes a bit expensive but it is worth it.

Chilean Sea Bass Recipes

Citrus Baked Sea Bass

4 sea bass fillets (4 to 5 oz. each)
salt and pepper to taste
1 red onion, halved
1 lime, halved
1/2 ripe avocado, peeled and cubed
1/2 cup finely diced jicama
1 Tbsp chopped fresh cilantro
1 tsp. minced fresh jalapeno chile
2 peeled oranges

Preheat the oven to 400°. Salt and pepper the fish to taste. Lay the fish out in a glass baking pan. Slice one half of the onion and one half of the lime. Put these slices on the fish. Bake 12 minutes or so or until the fish is done.

While the fish is baking, peel the oranges, cut them into chunks and put them in a small bowl. Mince the remaining onion and add it to the oranges. Sqeeze the juice from the remaining half of the lime into the oranges as well. Add the remaining ingredients plus a pinch of salt, if desired. Serve alongside the fish.

Baked Chilean Sea Bass

Olive oil
4 - 6 oz. Chilean sea bass fillets
salt and pepper
Your favorite fish seasoning.

This is very simple... Use the olive oil to lightly grease a baking pan. Sprinkle the fish with your favorite seasoning and bake at 425° for about 15 to 20 minutes.

The beauty of Chilean sea bass is that it is quite delicious on its own, it doesn't need a lot of stuff added to it.
