Sweet Potato Recipes

Oven Fried Sweet Potato Wedges

2 lbs sweet potatoes
1 tsp chili powder
1 tsp dried thyme
1 tsp salt
1/2 tsp ground cumin
1/2 tsp ground cinnamon
2 Tbsp canola oil

Preheat the oven to 450°. Coat cookie sheet with cooking spray. Cut the sweet potatoes into 1" wedges and put them in a good sized bowl. Drizzle the oil over the potatoes and then toss them to coat. Separately, mix the chili powder, thyme, salt, cumin, and cinnamon. Sprinkle this over the sweet potatoes and then toss everything until the potatoes are well coated. Arrange them in a single layer on the cookie sheet then bake until the sweet potatoes are tender and brown, about 20 to 25 minutes.

Roasted Spicy Sweet Potatoes

1 tsp coriander seed
1/2 tsp fennel seed
1/2 tsp dried oregano
1/4 tsp hot red pepper flakes
3/4 tsp kosher salt
2 lbs medium sweet potatoes
3 Tbsp vegetable oil

Preheat the oven to 425°. Combine the spices and the salt. If you have a mortar and pestle, it is a good idea to grind them up a bit. Cut the potatoes into 1" wedges and toss them with oil. Arrange them in a single layer in a large roasting pan and bake for about 20 minutes. When 20 minutes is up, turn them over and continue to bake them for another 15 minutes or so until tender and just barely golden brown.
