Turtle

Check Your Local Laws

Before you decide to go turtle hunting, you'll want to make sure to check your local laws. I think most places allow you to catch them but you may need a fishing license.

Salt the turtle meat well and put it in a crock pot. Add the remaining ingredients then cover and cook until the turtle meat is tender, probably about 6 or 7 hours. When the meat is tender, cut it into smaller chunks then cook until everything is done, another 2 hours or so.

Baked Turtle

For this recipe you are going to have to be a bit creative. The amounts aren't exact so just use your best judgement and I'm sure it will turn out fine. Essentially all you are doing is dredging the meat in the flour, browning it real quick and baking it.

Enough turtle meat for a good meal
1 C. flour
1 Tbsp. lemon pepper
1 tsp. black pepper
1 tsp. salt
1/4 cup margarine

If you want to add any seasonings, go ahead.

Preheat the oven to 275°. Rinse the turtle meat and let it drain. Combine the dry ingredients and roll the turtle hunks in it. Melt the margarine in a skillet, get it good and hot, then quickly brown the turtle meat. (You aren't trying to cook it here, you are just browning it.) Bake for 2 1/2 to 3 hours or until tender.
